Inheriting that DNA, a specialty store has opened in Nakamekuro that offers gozen-style high-quality Nodoguro fish prepared by the same broker.
Ginza Boan is famous for its "Donchicchi" dogfish from the Hamada brand in Shimane Prefecture, and we are particular about the time of year and sea area, and carefully select only the dogfish with oil on top.
We purchase only real Nodoguro fish through the discerning eyes of our dedicated brokers, and carefully grill them in a primitive style in special large fire pots that can be viewed from a counter with only 5 seats. The meal consists of 8 dishes including side dishes made with plenty of ingredients and seasonings from Kanazawa, the castle town of Hyakumansui, Kaga Prefecture, as well as a primitive grilled Nodoguro fish made with Suzu salt from Noto, Ishikawa Prefecture. It will be offered for 4,800 yen (tax included).
